Fresh Taco Seasoning
Best to prepare this ahead of time
1 tablespoon chili power
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon garlic power
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper
1/4 teaspoon dried oregano

Main Dish
2 lbs ground beef
1 medium onion diced
3 cloves garlic
1 can 15 oz pinto beans – rinse
1 can 15 oz black beans – rinse
1 can 28 oz fire-roasted tomatoes
3/4 cup corn (optional)
4 – 8 hatch green chilis roasted and diced
Salt to taste

Pico de Gallo
1 tomato diced
1 red bell pepper diced
1 orange bell pepper diced
1 small red onion diced
1 – 2 diced jalapeƱos
Cilantro chopped
Salt
1 Lime juice

How to cook it:
Put a pan on the stove, and throw in the ground beef, onions, garlic and salt. Cook it up until the beef is done, literally no pink.
Drain off any access fat
If you are putting this in a crock pot – transfer all to it now, if not continue in a large pot on the stove
Next add the fresh taco spices.
Note: if you feel lazy you can buy taco seasoning – like the good stuff not the cheap store brand.
Next add the beans, chilis and corn if you’re feeling brave, crushed tomatoes.
Crock pot you can cook for about 3 – 4 hours on high .. but I prefer a nice slow cook .. so slow for like 5 – 8 hrs
If you are cooking on the stove .. cover and simmer for about 6 hrs.

Next get started on making that Pico – place all those items into a bowl and set aside to put on top when chili is done.
Top with black olives and green onions!
