Ingredients:
1/2 cup salted butter
1/4 cup sweetener – monk fruit works well
1/2 cup heavy whipping cream
1/2 cup creamy peanut butter – Adams works well
Directions:
Cut up butter in small pieces and add to a medium sauce pan. Over medium heat let the butter melt. Once melted add sweetener. Reduce to a simmer and then add heavy whipping cream. Stir and cook for 3-4 minutes, do not let it burn. Heat until it is thick and creamy.
Remove pan from heat and whisk in peanut butter until there are no lumps.
Pour mixture into a wax-paper lined loaf pan and refrigerate for 1-2 hours. Cut into 1 inch squares. Keep refrigerated until ready to serve.
