- 1 lg Onion
- 4 Stalks Celery
- 3 - 4 Cloves Garlic
- Butter or Coconut Oil
- 6 Tblsp - Chili Power
- 1 Tblsp - Cumin
- 1 Tsp - Paprika
- 1 Tblsp - Red Pepper - Cayenne
- Salt - to taste
- Black Pepper - to taste
- 2 Cans Pinto Beans - drained and rinsed
- 2 Cans Black Beans - drained and rinsed
- 2 Cans Dark Kidney Beans - drained and rinsed
- 2 Cans Whole Tomatoes
- 1 Can Tomato Paste
- 16 oz of water
Saute onions, celery and garlic - in butter or coconut oil. Add 2 Tablespoons chili power.
In a large pot add beans, whole tomatoes, tomato paste, water, chili power, cumin, paprika, red pepper, salt and pepper.
Bring to a boil.
Add onions, celery, garlic
Reduce heat to a simmer and let simmer for 45 min to 1 hr.
